With a lot of parties coming up for the holidays, I thought I would share with you just one of the side dishes we always have to make. Fiesta Cracked Potatoes I have seen many versions of these potatoes everywhere, this is just my family’s version that we have been making for a few years now. I hope that you enjoy it as much as we do and if you have another version that you make please feel free to share. I’m always looking to try new recipes!
Fiesta Crack Potatoes Recipe

2 (16-oz) containers sour cream
2 cups shredded cheddar cheese
2 (3-oz) bags Bacon Bits
2 (1-oz) packages Hidden Valley Fiesta Ranch Dip
1 (32-oz) bag frozen shredded hash brown potatoes
1 Teaspoon Crushed Red Pepper
Instructions
- Preheat oven to 400ºF.
- Spray a 9×13-inch pan with cooking spray.
- Mix sour cream, cheese, crushed red pepper, bacon and ranch mix in a bowl. (Save about ½ cup of bacon bits to put on top)
- Stir in hash browns and mix well. Pour into prepared pan.
- Bake for uncovered for 60 minutes or until golden brown
- Ready To Serve!
